I've never heard of site flipping, could anyone please explain to me in short, what it's about and why it's so good for making money? I'm assuming it's not about turning a page upside down..

Not quite!
Many people new to making websites use software called Wordpress. This software is used quite simply because there are so many templates available that even a new web publisher can make an awesome looking website. Once the software is installed on your webserver, Wordpress deals with the whole website's management and links so you don't have to worry about learning a web programming language like HTML etc.
Now, because Wordpresss is so simple to use, many people find a specific niche which they believe may be highly profitable and build a website around that niche (having already registered a suitable domain name). Once the site is set up and is receiving reasonable amounts of traffic, you can start using revenue generating tools like AdSense etc to help bring in some finance.
once there appears to be some income generated, the site will attain more money if it is 'flipped'.
Basically
1 Buy hosting account
2 Buy domain name in a worthwhile niche (ie one that has good volumes of interest)
3 Upload Wordpress and a good clean template
4 populate site with a reasonable amount of content
5 Drive traffic to site
6 Start bringing home the bacon by monetising
7 Once there are some good stats / income . . . . sell it or 'FLIP' it on a site like flippa.
Hope this helps!

^ Yep, more or less what he said. It doesn't have to be brand new domain either and can be an old one that is just dead and not having much done with it.
It's a similar concept to house flipping, which you might've heard of before. They'll buy an old run-down house for super cheap, put a ton of time into cleaning it up, repairing it, adding very specific expensive-looking features (like an extra bathroom or rock countertops in the kitchen....or in the case of a website, highly professional themes and lots of followers). They pour their all into the house/site in a short amount of time, "flipping" its entire look and sale value, and then sell it off ASAP.
